I know Thinkhappy and I celebrate jewish holidays, but don't know if anyone else does.  Passover starts tonight at sundown and just wanted to see if anyone else on this site is going to be celebrating.  Also, wanted to see if anyone has any special recipes they use.  I have one for a great dessert (for anyone even if you aren't celebrating Passover).  Enjoy!

 

Chocolate Coverd Matzo (Yummy)

4-6 unsalted matzos

2 sticks of butter

1 package of chocolate chips

1 cup brown sugar

brickle/heath bar/m&ms

 

Line cookie sheet with foil, place wax paper over the foil

 

Line pan with matzos, cutting extras to fill in spaces

 

Combine butter and sugar in pan over heat stirring constantly, bring to boil and continue for 3 more minutes

 

Remove from heat, pour over matzos using spatula

 

Place in 375-degree heated oven and immediately reduce oven to 350-degrees

 

Bake at 350 for 15 minutes and check to make sure it's not burning

 

Remove from oven, sprinkle with chocolate chips and let them melt a bit before spreading with a spatula

 

Sprinkle with brickle or m&ms.

 

Let stand five minutes.  Put in freezer for about 15 minutes or until hard.  Break into pieces.
